TOP CHEF: An interview with del Lago’s Fabio Viviani

TYRE — It is virtually impossible to list all of the things that Fabio Viviani does. Sleep doesn’t appear to be one of them.

If you know who he is, it’s probably because you caught him on Bravo’s hit reality TV series “Top Chef,” where, thanks to his gregarious, vivacious personality, he earned the title of “Fan Favorite,” or on the spin-off, “Life After Top Chef.”

Pickled Purple Cauliflower at Prime & Provisions

The downtown steakhouse may be known for its high-quality meats, but there are plenty of reasons to peruse the other parts of the menu. Ultimately you’ll want to set your gaze on the Pickled Purple Cauliflower, an unexpected side that also features fennel, carrots, and arugula. All those vegetables go down a lot easier when they’re topped with feta and candied pecans. Consider it a decadent warm-up for the dry-aged bone-in ribeye coming your way. 222 N. Italian Chef Fabio Viviani

Celebrity chef, restauranteur and Bravo’s “Top Chef” Fabio Viviani will be opening his restaurant at del Lago Resort & Casino on Thursday.

There are so many beautiful Insta-worthy restaurants in downtown Chicago that serve weekend brunch. But if I had to pick one to visit every time, I would choose Siena Tavern.

Located on 51 W Kinzie St., Siena Tavern serves brunch on Saturdays and Sundays 10 a.m. to 3 p.m. I always make a reservation because there is usually a wait if you don’t, but you will probably still get seated without one.

There is an extensive weekend menu available, with sections divided by savory and sweet brunch food, combined with the regular lunch menu that is served every day.

Top Chef star Fabio Viviani opens Italian restaurant at del Lago

Celebrity Chef Fabio Viviani

The most upscale, and the most anticipated, of the dining options at the swanky del Lago Resort & Casino will open Thursday.

Portico by Fabio Viviani is named for the celebrity chef, a breakout star of Bravo’s reality series Top Chef. Known for his animated personality and thick accent from his native Italy, Viviani was voted fan favorite in the show’s fifth season. He has capitalized on his fame since the season aired in 2008; the restaurant is Viviani’s sixteenth.

The Italian steakhouse is Italian in inspiration, but the sophisticated dishes are generally worlds apart from Grandma’s red sauce. Think delicate spheres of fried bread called coccoli that you carefully break open and fill with thin shavings of Prosciutto di Parma and soft chunks of Taleggio cheese, a drizzle of truffle honey and dots of oniony pesto ($13). Or a slightly untraditional rigatoni carbonara ($16) with Brussels sprouts, Pecorino Romano cheese, black pepper and egg. It arrives at the table in a Mason jar; a server caps the jar, gives it a shake to combine the ingredients, and plates the dish. The pastas, gnocchi and breads are made from scratch daily.

Top Chef star opens restaurant at del Lago Casino

America knows Fabio Viviani’s work in the kitchen from Bravo’s “Top Chef,” but now Central New Yorkers can taste his talents.

“Portico by Fabio Viviani” opened to its first guests on Thursday at the del Lago Casino, just off the Waterloo exit on the Thruway.

Viviani was born and raised in Italy, and opened his first restaurants in Florence.

When we asked him about the Finger Lakes, he said, “Different region, similar feeling though. You’ve got a lot of farmers out here, a sense of community.”

Those farms will go to Viviani’s tables at Porticio, taking advantage of many local ingredients. At least one third of the wine list will feature Finger Lakes products.

The Italian Issue

I like the aroma of garlic – but not on my hands. To eliminate it, rub your hands with a little salt, then rub them against anything made of stainless steel, like a spoon or a pot. Do it for about a minute and the smell will completely go away!
