Basic Cheese Sauce


2 tbsp of Butter
Salt and pepper to taste
2 cup of half & half
1 cup of shredded Fontina or Swiss cheese
1 cup of shredded Cheddar cheese
½ cup of crumbled Blue Cheese
drops of Tabasco



  • Set a pots half full of Water on a medium fire
  • Set a glass bowl on top of the water so the steam will slowly heat the content of the bowl
  • Pour in the bowl the Half&Half, and all the rest of the ingredients but the cheeses
  • Once the liquid start to heat up add all the cheeses and stir once in a while
  • When is completely melted and creamy add to your favorite pasta or top your favorite entree
