Beef Roll Up

2 pounds skirt steak, pounded flat to ¼” thickness
4 slices deli ham
½ pound Italian sausage
1 tablespoon minced garlic
handful of fresh sage leaves
salt and pepper

Pre-heat oven to 375ºF. Mix the garlic with the sausage, set aside. Season both sides of the skirt steak with salt and pepper. Lay the skirt steak flat on a cutting board. Cover the steak with a layer of ham. Cover the ham with a layer of sausage. Press down lightly to compress. Starting at the bottom of the skirt steak, roll it up tightly, making sure the grain of the meat is running horizontally. Use toothpicks to secure the steak roll. Heat the oil in a deep sided sauté pan over medium-high heat. Sear the steak roll on all sides and place into hot oven. Bake for 12-15 minutes, or until sausage stuffing is cooked through. Remove from oven and let rest 10 minutes before slicing.
