Braciole di Manzo

Ingredients:
• ½ cup Grana Padano, grated
• 1/3 cup Fontina, shredded
• 1/3 cup Pecorino Romano cheese, grated
• ¼ cup pistachio, chopped
• 3 cloves of garlic, grated
• 2 tbsp. Sage, chopped
• ¼ cup fresh Parsley, chopped
• ½ cup of breadcrumbs
• Salt and Pepper, to taste
• ½ cup Olive Oil
• 1 lb. Sirloin, cut into 4 pieces pounded thin
• 12 very thin slices Prosciutto
• Olive oil to fry
• 2 cups Fabio’s Tomato sauce (see recipe)

Method:
1. Mix first 10 ingredients in a bowl and mix together.
2. Lay out beef. Spoon about ½ a cup of filling on top of the beef. Lay 3 slices of prosciutto on top, and press to create a pouch that folds in the filling. Roll up and use some toothpicks to hold together.
3. Heat some olive oil in a large skillet over medium high heat. Once hot but not smoking, season meat with salt and pepper, brown the rolls, about 1 ½ minutes per side. Cover with homemade tomato sauce, cover, and cook for 5/7 minutes.
