CARROT & GINGER BISQUE

Ingredients

4 Shallots Butter
Salt & Pepper
2 lbs. Carrots
2 oz. Ginger
1/4 cup Basmati Rice
5 cups Chicken Broth
Parsley

Directions

  1. Sauté 4 sliced shallots in butter; season with salt and pepper.
  2. Add 2 lbs. sliced carrots, 2 oz. knob of Ginger, ¼ cup Basmati Rice, 5 cups chicken broth.
  3. Simmer until the rice is tender. Add chopped parsley; puree.
