Chicken & Broccoli Curry

2 cups couscous, cooked according to package
2 tablespoons butter
1 pound skinless boneless chicken thighs, cut into 1” cubes
½ tablespoon yellow curry powder, plus more to taste
1 teaspoon garlic powder
Salt and pepper
2 cups broccoli florets, frozen
½ cup broth, beef or chicken
2 cups heavy cream

Season the chicken with curry powder, garlic powder, salt and pepper. In a large non-stick skillet melt the butter over medium-high heat. Add the chicken and cook until it begins to brown. Add the broccoli florets and continue to cook for approximately 5 minutes. Add the broth and two cups of heavy cream. Season with salt, pepper and curry powder to taste. Simmer until sauce begins to thicken. Serve over a bed of warm couscous.
