1 Tbsp. Olive Oil
1 cup mixed Mushrooms, chopped (such as Shiitake, Oyster, and Button)
3 Tbsp. Butter, unsalted
4 Chicken breasts, boneless, skinless, pounded thin (or cut in half)
¾ cup Marsala Wine
2 Tbsp. Parsley, chopped
2 cloves Garlic, minced
1 cup Heavy Cream
Salt and Pepper
1. In a large pan on medium high heat, place in oil and mushrooms. On medium high heat, cook the mushrooms until they start to caramelize, about 5-6 minutes.
2. In a separate pan on medium high heat, add butter and let melt. Then, lay in chicken and cook for 45 seconds. Flip and then deglaze with marsala wine. Cook for 2 minutes, add the cooked mushrooms, parsley, garlic, cream, and season to taste with salt and pepper.
3.Let reduce for another 1-2 minutes and enjoy.
