CHORIZO BUTTERNUT SQUASH

Ingredients

4 oz Mexican Chorizo
1/2 Onion
7 stems Fresh Thyme
7 stems Fresh Sage
Butter
Oil
Salt & Pepper
2 lbs Butternut Squash
5 cups Chicken Broth

Directions

  1. Sauté 4 oz Mexican Chorizo,½ sliced onion with 7 stems Fresh Thyme and Sage in equal parts butter and oil until soft.
  2. Add salt, pepper, 2 pounds diced butternut squash and 5 cups chicken broth
  3. Simmer until tender, then puree.
