Goat Cheese Tart with Shrimp and Zucchini

1 cup goat cheese
2 cups cream
4 medium shrimp, tail-off, deveined and sliced in half lengthwise
1 small zucchini, shaved/peeled into ribbons
fresh tarragon
Salt and pepper

Preheat oven to 350Fº. In a small bowl, mix together the goat cheese and heavy cream. Season with salt and pepper. Line a shallow baking dish or tart pan with a sheet of puff pastry. Pour in the goat cheese mixture into the tart shell. Season the shrimp with salt and pepper and place onto tart. Layer a few ribbons of zucchini onto the tart and top with a few leaves of tarragon. Place into the oven and bake until puff pastry is golden and flakey, about 20-25 minutes.
