Oven Love Ratatouille

serves 4


1 eggplant sliced
½ red onion, sliced
1 lb Yellow bell peppers, sliced
2 squash, cut into slices
½ cup cherry tomatoes, halved
1 tsp runny honey
1 tsp Smoked Paprika
6 fresh sprigs lemon thyme
1 tbsp Bertolli Classico Olive Oil
1 tsp chopped fresh parsley
1 tbsp lemon juice
4 tbsp white wine
2 tbsp chopped fresh basil



  • Combine first 9 ingredients in a bowl and toss. Season with salt and pepper, and lay on a sheet tray.
  • Bake in the oven at 450 F until caramelized, about 15-20 minutes.
  • Combine last 4 ingredients in a sauté pan and reduce until thickened.
  • Serve the vegetables with reduced white wine herbed liquid.
