Pan Pizza

Ingredients:
¼ cup nonfat dry milk powder
1 tbsp. sugar
1 package active dry yeast
1 ¼ cup warm water
2 tbsp. Olive Oil
2 cups AP Flour
2 cups Bread Flour
1 tsp. salt
Cooking Spray
2 cups whole peeled canned tomato, blended
1 cup Mozzarella, shredded
15 basil leaves, torn
Salt and Pepper
Extra Virgin Olive Oil

Method:
1.In a stand mixer, place first 4 ingredients and mix together with dough hook. Add olive oil, flours, and salt. Mix on medium for 6-8 minutes until a dough ball forms.
2.Take out dough ball and knead with hands for 4-5 minutes. Divide dough into two balls. In two 12″ cast iron skillets, spray with cook spray. Spread the dough out to about the size of the skillets using your fingers. Place the dough in the skillets, and Cover with plastic wrap and let rise in a warm place for at least 1 hour and up to an hour and a half.
3.During the last 20 minutes of rise time preheat the oven to 500ºF.
4.While dough is rising, season blended tomatoes with salt and pepper to taste. Ladle sauce on the dough, and spread cheese evenly. Place the skillets over high heat on the stovetop for about 1 minute. Place the skillets in the oven and bake until golden brown and crispy. This should take about 10 minutes. Remove and top with basil and drizzle with extra virgin olive oil.
