Red Beet Salad

Serves 2

1 lb roasted beets -peeled
2 tbsp aged balsamic vinegar
1 tbs extra virgin olive oil
1tbsp snipped fresh chives
sea salt to taste


1) Cut the beets into 1 inch pieces and gently toss with the olive oil and balsamic vinegar. Season to taste with the sea salt and sprinkle with the chives. Serve at room temperature.
