Salmon & Creamed Spinach

Sautéed Salmon with Creamed Spinach

• 4 filets of salmon, about 6oz. each
• 1 tbsp. Rosemary, chopped
• 1 tbsp. Garlic powder
• 1 tbsp. Olive Oil
• 2 cloves Garlic, minced
• 1 lb. Baby Spinach
• 1/2 cup Heavy Cream
• Salt and Pepper
• Olive Oil

1. Take salmon and pat dry. Season with salt and pepper. Combine next 3 ingredients in a bowl and rub on top of salmon. Heat a non-stick pan on medium high heat and drizzle in olive oil. Lay down salmon flesh side down and sear for 3 minutes. Flip and let cook for another 3 minutes. Turn off pan and let salmon sit for another minute. Remove and put in a plate.

2. Wipe out pan and heat to high. Drizzle in touch a olive oil and add garlic. Cook for 20 seconds and add spinach. Let cook for 1 minute and add cream. Reduce until creamy and season with salt and pepper. Serve with salmon.
