Salmon & Zucchini Pasta

Serves 3-4

•2 medium zucchini, spiralized
•3 tbsp. Extra Virgin Olive Oil
•1 garlic clove, grated
•½ cup sliced cherry tomatoes
•½ tsp crushed red pepper flakes
•¼ cup Basil, torn
•1 cup Vegetable broth
•½ cup ricotta
•2 tbsp. grated Pecorino
•Salt and Pepper, to taste

1.Toss zucchini, olive oil, garlic, tomatoes, basil, and chili flake in a bowl. Season with salt and pepper, and set aside.

2.In a sauté pan, heat broth and adjust seasoning. Add in ricotta, pecorino, and whisk to combine. If sauce is too thick, add a touch more broth or water.

3.Remove from heat, and add to vegetable bowl. Toss all ingredients together and adjust seasoning.
