Sweet Potatoes with Spiced Almonds
3 tablespoons olive oil, plus more for the baking dish
4 sweet potatoes, peeled and cut into chunks
½ cup grated parmesan
kosher salt and black pepper
1 cup slivered Almonds
½ cup packed light brown sugar
2 teaspoons chili powder
pinch cayenne pepper
- Heat oven to 375° F. Oil a shallow baking dish.
- In a large bowl, toss the rest of the ingredients and place in the baking dish.
- Cover with foil, and bake until tender, 45 to 50 minutes.
