Swordfish and Tomato Sauce

Swordfish and Tomato Sauce

4 tablespoons olive oil
1 medium red onion, julienned
3 cloves garlic, smashed
1 cup pitted green olives, halved
1 cup tomato sauce
Two 6-ounce swordfish steaks
Salt and pepper
½ cup fresh basil leaves
2 tablespoons toasted pine nuts

Heat the oil in a non-stick deep sided skillet over medium-high heat. Add the onion, garlic and olives and season with salt and pepper. Cook until onions are brown and caramelized. Add the tomato sauce and bring to a simmer. Season both sides of the swordfish steaks with olive oil, salt and pepper. Place the steaks into the sauce, cover and bake in oven for 7-10 minutes. Remove from oven and top with fresh basil leaves and toasted pine nuts.
